Small business, big dreams: How BMO opened doors for Tortilla Flatz
Cristina Zamarron, owner of Tortilla Flatz Mexican Grill in Plainfield, Illinois, has always poured her heart into her restaurant. Known for its cozy atmosphere and inventive fusion dishes like house-made barbacoa and signature margaritas, Tortilla Flatz has been a local favorite since its founding in 2007. The restaurant proudly sources ingredients from local partners and collaborates with nearby breweries and distilleries, reflecting Zamarron’s commitment to community and quality – something she’s brought to every place she’s worked or owned in her over two decades of experience in the restaurant industry.
However, the COVID-19 pandemic brought unforeseen challenges and Zamarron felt like not having a steady banking relationship at the time really hindered her ability to navigate through the obstacles created in 2020 – especially with financing and establishing credit, when she previously had always saved up and paid for things in cash.
This changed when she connected with Bank Manager Anna Hullinger at BMO. Anna provided guidance on improving her credit and financial practices, enabling Zamarron to access financing for critical upgrades she wanted for her business. With BMO’s support, her credit profile soon flourished, and she was able to invest in upgrades, catering equipment and vehicle repairs. She also obtained a liquor license for mobile events, which made a lasting impact on the scope and capabilities for the mobile catering aspect of Tortilla Flatz.

Today, Tortilla Flatz continues to thrive, celebrating 18 years in business and earning accolades like the 2022 Best Food & Cocktails Award from the Plainfield Shorewood Area Chamber of Commerce. Zamarron looks forward to a bright future with many more years in business.
